Cheesy Loaded Chicken Twice-Baked Potatoes

These loaded chicken twice-baked potatoes are a deliciously creamy and cheesy dish that will leave you wanting more. Perfect for dinner or a hearty side!

Ingredients:

  • 4 Russet Potatoes
  • 1 cup Heavy Cream
  • 1 cup Colby Jack Cheese (grated)
  • Seasonings to taste (parsley, onion powder, garlic salt, pepper)
  • 1 cup Sharp Cheddar Cheese (grated)
  • 1 stick Unsalted Butter (melted)
  • 2 tbsp Vegetable Oil
  • 1 cup Broccoli (optional, cooked)
  • Aluminum Foil
  • 1 tbsp Garlic Paste
  • 1/2 cup Sour Cream
  • Extra Virgin Olive Oil (EVOO)
  • 2 cups Cubed Chicken (breasts or tenderloin)

 

Cookware Needed:

  • Baking Sheet
  • Mixing Bowl
  • Frying Pan
  • Aluminum Foil

 

 

 

Directions:


Step 1: Prep the Potatoes:

  • Wash the Russet potatoes and coat them with vegetable oil. Wrap each potato tightly in aluminum foil.
  • Bake in the oven at 400°F (200°C) for about 1 hour, or until soft.

 

Step 2: Prepare the Filling:

  • Once cooked, remove the foil and cut each potato in half lengthwise. Scoop out the insides into a mixing bowl.
  • Add melted butter, garlic paste, parsley, onion powder, garlic salt, cooked broccoli, sharp cheddar cheese, pepper, and sour cream. Mix until well combined, then fill the potato skins with the mixture.

 

Step 3: Make the Sauce:

  • In a pan, melt 1 tbsp of butter with 1 tsp of garlic paste and parsley. Add the heavy cream and let it cook for 5 minutes to thicken.
  • Season with pepper, onion powder, and Lawry's seasoning salt. Stir in the Colby Jack cheese until the sauce reaches your desired consistency.

 

Step 4: Cook the Chicken:

  • Cube the chicken breasts and season with EVOO, parsley, onion powder, garlic powder, and adobo. Cook in a greased pan until fully cooked.

 

Step 5: Assemble the Potatoes:

  • Spread a thin layer of sauce on the filled potatoes, then add the cooked chicken, followed by more sauce and a sprinkle of cheese on top.
  • Bake at 125°F (52°C) until the cheese is melted.
