Ingredients

 

  • 4 cups fresh or frozen corn (about 4 ears of corn if using fresh)
  • 2 medium potatoes, diced
  • 1 medium onion, chopped
  • 2 cups vegetable or chicken broth
  • 1 cup heavy cream or milk
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh chives or parsley for garnish (optional)

  • Large pot or Dutch oven
  • Wooden spoon or spatula
  • Measuring cups and spoons

 

 


Directions


Step : Sauté the Onions.
In a large pot or Dutch oven, melt the butter over medium heat. Add the chopped onion and sauté for about 5 minutes until softened and translucent.

Step 2: Add Potatoes and Corn.
Stir in the diced potatoes and corn. Cook for an additional 2-3 minutes, stirring occasionally.

Step 3: Add Broth.
Pour in the vegetable or chicken broth. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 15 minutes, or until the potatoes are tender.

Step 4: Blend the Chowder.
For a creamier texture, use an immersion blender to partially blend the chowder, leaving some chunks for texture. If you don’t have an immersion blender, you can transfer about half of the chowder to a blender, blend until smooth, and return it to the pot.

Step 5: Stir in Cream.
Add the heavy cream or milk, garlic powder, salt, and pepper. Stir to combine and heat through for another 5 minutes.

Step 6: Serve.
Ladle the corn chowder into bowls and garnish with fresh chives or parsley if desired.
