Ingredients:

 

  • 1 lb (450g) ribeye steak, cut into 1-inch strips
  • 2 cups baby carrots, halved
  • 1 cup asparagus, trimmed and cut into 2-inch pieces
  • 1 cup cherry tomatoes, halved
  • 4 cloves garlic, minced
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon red pepper flakes (optional)
  • Zest of 1 lemon
  • Lemon wedges (for serving)

 

Cookware Needed:

 

  • Aluminum foil
  • Grill or oven
  • Mixing bowl
  • Tongs
  • Pastry brush

 

 

Directions:

 

Step 1: Preheat the Grill/Oven.
If using a grill, preheat to medium-high heat. If using an oven, preheat to 425°F (220°C).

Step 2: Prepare the Herb Mixture.
In a mixing bowl, combine the melted butter, minced garlic, rosemary, thyme, Dijon mustard, lemon zest, salt, pepper, and red pepper flakes. Mix well.

Step 3: Coat the Steak.
Add the ribeye strips to the herb mixture, tossing to coat evenly. Let it marinate for about 10 minutes while you prepare the vegetables.

Step 4: Prepare the Foil Packs.
Cut four large pieces of aluminum foil (about 14x14 inches).

Step 5: Assemble the Packs.
In the center of each piece of foil, place an equal amount of the marinated steak strips. Top with baby carrots, asparagus, and cherry tomatoes. Drizzle any remaining herb butter over the vegetables.

Step 6: Seal the Packs.
Fold the foil over the ingredients to create a sealed packet, ensuring there are no openings for steam to escape.

Step 7: Cook.
Place the foil packs on the grill or in the oven. Cook for 25-30 minutes, or until the steak is cooked to your desired doneness and the vegetables are tender.

Step 8: Serve.
