Ingredients:

 

  • 6 large eggs
  • 1 ripe avocado, mashed
  • 2 tablespoons Greek yogurt (or mayonnaise)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/4 cup red onion, finely chopped
  • 1/4 cup celery, finely chopped
  • Salt and pepper to taste
  • Fresh herbs (e.g., dill or parsley), for garnish
  • Whole grain bread or lettuce leaves, for serving

  • Pot for boiling eggs
  • Mixing bowl
  • Fork or potato masher
  • Measuring spoons

 

 

Directions:

 

Step 1: Boil the Eggs.
Place the eggs in a pot and cover them with water. Bring to a boil over medium-high heat. Once boiling, cover the pot and remove it from heat. Let the eggs sit for 12-15 minutes. Then, transfer them to an ice bath to cool.

Step 2: Prepare the Salad.
Once the eggs are cool, peel and chop them into small pieces. In a mixing bowl, combine the chopped eggs, mashed avocado, Greek yogurt, Dijon mustard, and lemon juice. Mix until well combined.

Step 3: Add Vegetables.
