Ingredients

  • 4-5 lb ribeye roast (bone-in or boneless)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon rosemary (fresh or dried)
  • 1 teaspoon thyme (fresh or dried)
  • 1 teaspoon onion powder
  • 1 teaspoon paprika

  • Meat thermometer
  • Aluminum foil

 

Directions

Step 1: Preheat the Oven.
Preheat your oven to 450°F (230°C).

Step 2: Prepare the Roast.
Pat the ribeye roast dry with paper towels. This helps achieve a nice crust.

Step 3: Season the Roast.
In a small bowl, mix together the olive oil, minced garlic, salt, black pepper, rosemary, thyme, onion powder, and paprika. Rub this mixture all over the roast, ensuring it is evenly coated.

Step 4: Roast the Meat.
Place the roast on a rack in a roasting pan. Insert a meat thermometer into the thickest part of the roast (avoiding the bone if using a bone-in roast). Roast in the preheated oven for 15 minutes.

Step 5: Lower the Temperature.
After 15 minutes, reduce the oven temperature to 325°F (165°C) and continue roasting until the internal temperature reaches 130°F (54°C) for medium-rare, about 1 hour to 1 hour 15 minutes more.

Step 6: Rest the Roast.
Once cooked to your desired doneness, remove the roast from the oven and tent it loosely with aluminum foil. Let it rest for at least 15-20 minutes before slicing. This allows the juices to redistribute.

Step 7: Slice and Serve.
Slice the roast against the grain into thick pieces and serve with your favorite sides.
