Ingredients:
- Paella rice
- Chicken pieces
- Chorizo sausage
- Shrimp
- Tomatoes
- Olives
- Saffron threads
- Olive oil
- Salt and pepper
Method:
- Heat a paella pan over medium heat and add olive oil.
- Brown the chicken pieces and chorizo sausage. Season with salt and pepper.
- Add the tomatoes and olives, cooking for a few minutes.
- Add the rice and stir to coat with the oil.
- Sprinkle the saffron threads over the rice and pour in enough hot water to cover the rice by about 1 inch.
Directions:
- Reduce the heat to low and simmer, uncovered, for 20 minutes.
- Add the shrimp and continue cooking for another 5 minutes, or until the rice is tender and the shrimp are cooked.
- Remove from heat and let stand for 5 minutes before serving.
Tip: A traditional paella pan with a shallow edge allows for even evaporation and a crusty bottom.
