Spanish Paella

Ingredients:

  • Paella rice
  • Chicken pieces
  • Chorizo sausage
  • Shrimp
  • Tomatoes
  • Olives
  • Saffron threads
  • Olive oil
  • Salt and pepper

Method:

  1. Heat a paella pan over medium heat and add olive oil.
  2. Brown the chicken pieces and chorizo sausage. Season with salt and pepper.
  3. Add the tomatoes and olives, cooking for a few minutes.
  4. Add the rice and stir to coat with the oil.
  5. Sprinkle the saffron threads over the rice and pour in enough hot water to cover the rice by about 1 inch.

Directions:

  • Reduce the heat to low and simmer, uncovered, for 20 minutes.
  • Add the shrimp and continue cooking for another 5 minutes, or until the rice is tender and the shrimp are cooked.
  • Remove from heat and let stand for 5 minutes before serving.

Tip: A traditional paella pan with a shallow edge allows for even evaporation and a crusty bottom.
