  • 4 medium zucchinis, spiralized into noodles
  • 1 pound prawns, peeled and deveined

  • 1 tablespoon fresh basil, chopped (plus more for garnish)
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese (for serving)

Step 1: Prepare the Zucchini.
Use a spiralizer to create zucchini noodles. If you don’t have a spiralizer, you can use a vegetable peeler to create thin strips. Set aside.

Step 2: Cook the Prawns.

  • In a large frypan, heat olive oil over medium heat. Add minced garlic and red pepper flakes (if using), sautéing for about 1 minute until fragrant.
  • Add the prawns to the frypan. Cook for 2-3 minutes, stirring occasionally, until they turn pink and opaque. Season with salt and pepper. Remove the prawns from the frypan and set aside.

Step 3: Sauté the Cherry Tomatoes.
In the same frypan, add the halved cherry tomatoes. Cook for about 3-4 minutes, until they start to soften and release their juices.

Step 4: Combine Ingredients.
Return the cooked prawns to the frypan and add the spiralized zucchini. Toss everything together gently, cooking for an additional 2-3 minutes until the zucchini is tender but still slightly crisp.

Step 5: Finish with Herbs.
Remove from heat and stir in the chopped basil and parsley. Adjust seasoning with salt and pepper as needed.

Step 6: Serve.
Plate the zucchini spaghetti and top with grated Parmesan cheese and additional fresh basil for garnish. Enjoy your delicious meal!
