  • 2 whole mackerel, cleaned and scaled
  • 1/2 cup all-purpose flour (for dredging)

  • 1 tablespoon butter
  • Lemon wedges (for serving)
  • Fresh parsley, chopped (for garnish)

Directions

 

Step 1: Prepare the Mackerel.

  • Rinse the mackerel under cold water and pat dry with paper towels. Make sure they are completely dry to achieve a crispy skin.
  • Season the fish inside and out with salt and pepper.

 

Step 2: Dredge the Fish.
Place the flour on a plate. Dredge each mackerel in the flour, shaking off any excess.

Step 3: Heat the Skillet.
In a large skillet, heat the olive oil and butter over medium-high heat until hot and shimmering.

Step 4: Cook the Mackerel.

  • Carefully place the dredged mackerel in the skillet, skin-side down. Cook for about 4-5 minutes until the skin is golden brown and crispy.
  • Using tongs or a spatula, gently flip the fish and cook for another 4-5 minutes on the other side until cooked through and the flesh flakes easily.

 

Step 5: Serve.
Remove the mackerel from the skillet and transfer to a serving plate. Serve with lemon wedges and garnish with fresh parsley.
