Creamy Butternut Squash Soup

Ingredients:

 

  • Butternut squash, 1 medium (about 3 lbs), peeled, seeded, and cubed
  • Onion, 1 medium, diced
  • Garlic, 3 cloves, minced
  • Vegetable broth, 4 cups
  • Heavy cream, 1/2 cup
  • Ground cinnamon, 1 tsp
  • Ground nutmeg, 1/2 tsp
  • Goji powder, 2 tbsp
  • Salt and black pepper, to taste
  • Toasted pumpkin seeds, for garnish
  • Cubed cheese (such as cheddar or Parmesan), for garnish

Directions:

Step 1: In a large pot or Dutch oven, sauté the diced onion in a bit of olive oil over medium heat until softened, about 5 minutes.

Step 2: Add the minced garlic and cook for 1 minute, until fragrant.

Step 3: Add the cubed butternut squash and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the squash is very tender.

Step 4: Using an immersion blender, purée the soup until smooth and creamy. Alternatively, you can transfer the soup to a regular blender and blend in batches.

Step 5: Stir in the heavy cream, cinnamon, and nutmeg. Season with salt and black pepper to taste.

Step 6: Ladle the soup into bowls and garnish with toasted pumpkin seeds, goji powder and cubed cheese.
