Directions:
Step 1. Prep & Season:
- Preheat the oven to 425°F (220°C). Line a baking sheet with foil (optional).
- Chicken: In a bowl, toss chicken chunks with ½ tbsp olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper.
- Potatoes: Toss halved baby potatoes with remaining ½ tbsp olive oil, salt, and pepper.
Step 2. Roast:
- Spread potatoes (cut-side down) and chicken on separate sides of the baking sheet.
- Roast for 15 minutes. Flip the chicken halfway through.
Step 3. Add Toppings:
- Remove the baking sheet. Top chicken with shredded cheese and red bell pepper slices. Return to the oven for 3-5 minutes to melt the cheese.
Step 4. Cook the Shrimp:
- While roasting, pat shrimp dry. Toss with olive oil, garlic powder, lemon juice, salt, and pepper.
