Ingredients:


  • 6 large eggs
  • 1/4 cup milk
  • 1 cup bell peppers, diced (any color)
  • 1 cup spinach, chopped
  • 1/2 cup onion, finely chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup shredded cheese (cheddar, feta, or your choice)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (like parsley or basil) for garnish (optional)

  • Spatula

Directions:


Step 1: Preheat the Oven.
Preheat your oven to 375°F (190°C).

Step 2: Prepare the Vegetables.
In a skillet, heat olive oil over medium heat. Add chopped onion and bell peppers, sautéing until softened (about 3-4 minutes). Add spinach and cherry tomatoes, cooking for an additional 2 minutes until the spinach wilts.

Step 3: Mix the Eggs.
In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.

Step 4: Combine Ingredients.
Pour the egg mixture over the sautéed vegetables in the skillet. Gently stir to distribute the vegetables evenly. Sprinkle the shredded cheese on top.

Step 5: Cook on the Stove.
Cook on the stovetop for about 3-4 minutes until the edges begin to set.

Step 6: Bake.
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set in the center and lightly golden on top.

Step : Serve.
Remove from the oven and let cool for a few minutes. Slice into wedges and garnish with fresh herbs if desired.
