Ingredients

For the Picadillo Filling:

  • 1 lb ground beef
  • 1 medium onion, diced
  • 1 bell pepper (any color), diced
  • 2 cloves garlic, minced
  • 1 can (8 oz) tomato sauce
  • 1/4 cup raisins
  • 1/4 cup green olives, sliced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil

For the Empanada Dough:

  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and diced
  • 1/2 cup cold water
  • 1 egg (for egg wash)

Directions

Step 1: Prepare the Filling.
In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing until softened (about 5 minutes). Add the minced garlic and cook for another minute.

Step 2: Cook the Beef.
Add the ground beef to the skillet, breaking it apart with a wooden spoon. Cook until browned, about 7-10 minutes. Drain excess fat if necessary.

Step 3: Add Remaining Ingredients.
Stir in the tomato sauce, raisins, olives, cumin, oregano, salt, and pepper. Simmer for about 5-7 minutes until heated through. Remove from heat and let cool.

Step 4: Make the Dough.
In a mixing bowl, combine the flour and salt. Cut in the chilled butter until the mixture resembles coarse crumbs. Gradually add cold water, mixing until a dough forms. Divide the dough into two discs, wrap in plastic wrap, and refrigerate for 30 minutes.

Step 5: Roll Out the Dough.
Preheat the oven to 400°F (200°C). On a floured surface, roll out one disc of dough to about 1/8 inch thick. Use a round cutter or glass to cut out circles (about 4-5 inches in diameter).

Step 6: Fill the Empanadas.
Place a tablespoon of the picadillo filling in the center of each dough circle. Fold the dough over to create a half-moon shape, pressing the edges to seal. Use a fork to crimp the edges for a decorative touch.

Step 7: Bake.
Place the empanadas on a baking sheet lined with parchment paper. Beat the egg and brush it over the tops of the empanadas for a golden finish. Bake for 25-30 minutes or until golden brown.

Step 8: Serve.
Let the empanadas cool slightly before serving. Enjoy them warm with your favorite dipping sauce or salsa!
