Ingredients

  • 1 lb (450g) flank steak or sirloin, sliced thinly against the grain
  • 2 medium zucchinis, spiralized into noodles
  • 3 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • Juice of 1 lemon
  • Zest of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

  • Spiralizer (or vegetable peeler)

Step 1: Prepare the Zucchini Noodles.
Spiralize the zucchinis into noodles using a spiralizer. If you don’t have one, use a vegetable peeler to create thin strips. Set aside.

 

Step 2: Cook the Steak.

  • Heat 1 tablespoon of butter in a large skillet over medium-high heat.
  • Season the sliced steak with salt and pepper. Once the skillet is hot, add the steak in a single layer.
  • Cook for 2-3 minutes on each side until browned and cooked to your desired doneness. Remove the steak from the skillet and set aside.

 

Step 3: Make the Lemon Garlic Butter Sauce.

  • In the same skillet, add the remaining 2 tablespoons of butter and minced garlic. Sauté for about 30 seconds until fragrant.
  • Add the lemon juice and zest, stirring to combine. Let it simmer for a minute.

 

Step 4: Add Zucchini Noodles.
Add the spiralized zucchini noodles to the skillet. Toss them in the lemon garlic butter sauce for about 2-3 minutes until just tender but still al dente.

Step 5: Combine and Serve.

  • Return the cooked steak to the skillet, tossing everything together to coat in the sauce.
  • Adjust seasoning with additional salt and pepper if needed.
  • Serve immediately, garnished with fresh parsley.
