Steak Fajita Roll-Ups are a delicious and easy-to-make dish that combines marinated steak with colorful bell peppers and onions, all wrapped in a soft tortilla. Perfect for a quick dinner or a fun party appetizer!

Ingredients

  • 1 lb flank steak, thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 4 large flour tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Sour cream and salsa, for serving (optional)

  • Skillet or frying pan
  • Tongs
  • Knife
  • Cutting board
  • Serving platter

 

 

Directions

Step 1: Marinate the Steak.
In a bowl, combine olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Add the sliced flank steak and toss to coat. Let it marinate for at least 10 minutes.

Step 2: Cook the Vegetables.
Heat a frying pan over medium heat. Add the sliced bell peppers and onion, cooking until they are tender, about 5 minutes. Remove from the skillet and set aside.

Step 3: Cook the Steak.
In the same frying pan, add the marinated steak and cook for about 3-5 minutes, or until browned and cooked to your desired doneness.

Step 4: Assemble the Roll-Ups.
On each tortilla, layer the cooked steak, sautéed bell peppers and onions, and a sprinkle of shredded cheese. Roll up tightly.

Step 5: Heat the Roll-Ups.
Place the roll-ups seam-side down in the skillet and cook for an additional 2-3 minutes on each side until the tortillas are golden and the cheese is melted.

Step 6: Serve.
Slice the roll-ups in half and serve with sour cream and salsa, if desired.
