The Southwest Steak Bowl is a vibrant and hearty dish featuring marinated grilled steak served over a bed of rice or quinoa, topped with fresh vegetables, black beans, corn, and a zesty dressing. Ingredients:

 

For the steak:

  • 1 pound flank steak
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

 

For the bowl:

  • 2 cups cooked rice or quinoa
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 cup red onion, diced
  • 1/2 cup cilantro, chopped
  • Lime wedges for serving

 

For the dressing:

  • 1/4 cup sour cream or Greek yogurt
  • 1 tablespoon lime juice
  • 1 teaspoon hot sauce (optional)
  • Salt to taste

Directions:

 

Step 1: Marinate the Steak.
In a mixing bowl, combine olive oil, lime juice, chili powder, cumin, garlic powder, salt, and pepper. Add the flank steak, ensuring it is well coated. Let it marinate for at least 15 minutes.

Step 2: Prepare the Dressing.
In a small bowl, mix together sour cream (or Greek yogurt), lime juice, hot sauce (if using), and salt. Set aside.

Step 3: Cook the Steak.
Preheat the grill or frying pan over medium-high heat. Remove the steak from the marinade and grill for about 4-5 minutes per side for medium-rare, or until desired doneness. Remove from heat and let it rest for a few minutes before slicing.

Step 4: Assemble the Bowl.
In serving bowls, layer the cooked rice or quinoa at the bottom. Top with black beans, corn, cherry tomatoes, diced avocado, and red onion. Add sliced steak on top.

Step 5: Drizzle with Dressing.
Drizzle the prepared dressing over the bowls and garnish with chopped cilantro. Serve with lime wedges on the side.
