Cheesy Chicken & Shrimp with Roasted Baby Potatoes

Ingredients:

For the Chicken & Potatoes:

  • 2-3 boneless chicken tenders (or 1 small chicken breast, cut into chunks)
  • 2-3 baby potatoes, halved
  • 1 tbsp olive oil (divided)
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and black pepper, to taste
  • ¼ cup shredded cheddar or Monterey Jack cheese
  • ¼ red bell pepper, thinly sliced

 

For the Shrimp:

  • 4 large raw shrimp (peeled, tail-on)
  • 1 tsp olive oil
  • ½ tsp garlic powder
  • ¼ tsp lemon juice
  • Pinch of salt and black pepper


Garnish:

  • 1 tsp chopped fresh parsley

 

Cookware and Tools Needed:

  • Tongs
  • Small mixing bowl
  • Non-stick pan or grill pan (for frying the shrimp)
  • Baking sheet (is ideal for roasting potatoes, but if you don’t have one, the frying pan from your pot set works great too—it’s versatile enough for both frying and baking!)

Directions:

Step 1. Prep & Season:

  • Preheat the oven to 425°F (220°C). Line a baking sheet with foil (optional).
  • Chicken: In a bowl, toss chicken chunks with ½ tbsp olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper.
  • Potatoes: Toss halved baby potatoes with remaining ½ tbsp olive oil, salt, and pepper.

 

Step 2. Roast:

  • Spread potatoes (cut-side down) and chicken on separate sides of the baking sheet.
  • Roast for 15 minutes. Flip the chicken halfway through.

 

Step 3. Add Toppings:

  • Remove the baking sheet. Top chicken with shredded cheese and red bell pepper slices. Return to the oven for 3-5 minutes to melt the cheese.

 

Step 4. Cook the Shrimp:

  • While roasting, pat shrimp dry. Toss with olive oil, garlic powder, lemon juice, salt, and pepper.
  • Heat a skillet over medium-high. Cook shrimp for 1-2 minutes per side until pink and opaque.

 

Step 5. Serve:

  • Plate the cheesy chicken, crispy potatoes, and shrimp. Sprinkle chopped parsley on top.
