Ingredients

Chicken Marsala:

  • 4 boneless, skinless chicken breasts, pounded thin
  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil
  • 8 oz cremini or button mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup Marsala wine
  • 1 cup chicken broth
  • 2 tablespoons unsalted butter
  • 2 tablespoons chopped fresh parsley
  • Salt and black pepper to taste

Garlic Mashed Potatoes:

  • 2 lbs Yukon Gold potatoes, peeled and cut into 1-inch cubes
  • 4 cloves garlic, minced
  • 1/2 cup warm milk
  • 4 tablespoons unsalted butter
  • Salt and black pepper to taste

Cookware Needed

  • Large skillet or sauté pan
  • Large pot for boiling potatoes
  • Potato masher or ricer
  • Cutting board and sharp knife

Directions

Prepare the Chicken Marsala:

Step 1: Dredge the pounded chicken breasts in the flour, shaking off any excess.
Step 2: Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 3-4 minutes per side until golden brown. Transfer to a plate and set aside.
Step 3: In the same skillet, add the sliced mushrooms and garlic. Sauté for 2-3 minutes until fragrant.
Step 4: Deglaze the pan with the Marsala wine, scraping up any browned bits. Let the wine simmer for 2-3 minutes.
Step 5: Add the chicken broth and bring to a simmer. Cook for 5-7 minutes until the sauce has thickened slightly.
Step 6: Return the chicken and any accumulated juices to the skillet. Reduce heat to medium-low and let the chicken simmer in the sauce for 8-10 minutes, turning occasionally, until cooked through.
Step 7: Remove from heat and stir in the butter until melted. Garnish with chopped parsley.

Prepare the Garlic Mashed Potatoes:

Step 1: In a large pot, cover the potato cubes with cold water and bring to a boil over high heat.
Step 2: Reduce heat to medium-low and simmer for 15-20 minutes, until the potatoes are tender when pierced with a fork.
Step 3: Drain the potatoes and return them to the pot. Add the minced garlic, warm milk, and butter. Mash the potatoes until smooth and creamy. Season with salt and pepper to taste.

Serve:

Step 1: Place a portion of the garlic mashed potatoes on each plate.
Step 2: Top with a chicken breast and spoon the Marsala sauce and mushrooms over the top.
